Ingredients
  

  • 1/2 cup Zucchini Grated
  • 1/4 cup Lemon Zest grated
  • 1 whole Egg
  • 2 tbsp Oil
  • 1/4 cup Honey
  • 3/4 cup Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon

Method
 

  1. Grate zucchini and lemon peel and set aside In a mixing bowl
  2. add eg, oil and honey and mix until blended.
  3. Combine all dry ingredients: flour, baking powder, salt and cinnamon in a separate bowl
  4. Add wet ingredients, zucchini and lemon peel to dry ingredients and stir until combined.
  5. Place in muffin cups. Bake at 400 degrees for 20 minutes. Let cool before serving.
