Mother’s Day Breakfast Casserole & Cranberry Mimosa

Dads and kids will love our easy, make-ahead casserole. Moms will be impressed by the pretty Cranberry Mimosa – and the morning off!
For the Cranberry Mimosas
Equal parts cranberry and orange juice
Champagne to taste or sparkling water

  • 1 lb Sausage (bulk)
  • 1 1/2 cup Cheddar Cheese (grated )
  • 1 loaf White Sandwich Bread (cut into cubes)
  • 2 cup Milk (or half & half)
  • 6 Egg
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tsp Mustard Powder
  1. Make the casserole, up to a day ahead and refrigerate.

  2.  Crumble the sausage into a pan.

  3. Saute until browned. Drain fat from pan.

  4. In a large bowl, whisk milk or cream, eggs, salt and pepper and dry mustard.

  5. Grease a 9 x 13 baking dish.

  6. Layer ingredients into greased pan: bread, sausage, cheese and pour custard over top.

  7. Bake in a preheated 350F over 45-60 minutes.

  8. For the Mimosas: Pour into a pretty glass or champagne flute and serve!
