Turkey Meatball Pasta
Lianne Castelino and cooking instructor Siva Swaminathan make a healthy, high-fiber turkey meatball pasta recipe
- 1/2 lb lean ground turkey
- 1/4 ea chopped onion
- 1 clove garlic, minced
- 1/4 cup bread crumbs
- 100% bran (soaked in a little water to soften)
- 1 tsp dry oregano
- 1/2 tsp salt
- 1 ea egg
- Pasta Sauce
- Pasta (whole wheat or white)
Make meatball mixture

Combine turkey, onion, garlic, bread crumbs, oregano, salt, egg in a bowl

Soak the bran flakes into a little bit of water to soften them (makes a paste)

Add the bran to the rest of the ingredients

Form meatballs from the mixture
Poach Meatballs

In a frying pan, add about 1/2 inch of water, bring to a boil

Add meatballs
-
Cover and cook for about 10 minutes

Add meatballs to your pasta sauce

Continue cooking for about 45 mins
Meatballs also freeze well to use in other dishes.
